Summer Cocktails
With the weather here in Australia already reaching highs of 40 degrees (over 100 Fahrenheit) it's time to grab a refreshing cocktail, a pair of sunnies, and chill in the hot sunshine! Here are a few of our faves with a sneaky one added in for the guys out there who want a change from beer! (Wait... do men get sick of beer?)
Pomegranate Champagne Cocktail
Ingredients
30ml pomegranate or cranberry juice
1 teaspoon pomegranate seeds (optional)
Champagne or sparkling wine
Directions
Pour the pomegranate juice into a champagne flute
Slowly add champagne
Garnish with pomegranate seeds
Aperol Spritz
Ingredients
Ice
1 Orange slice
Prosecco or sparkling wine
30ml Aperol
Soda water
Directions
Fill a large wine glass half way with ice
Fill the glass 2/3 with prosecco then add 30ml of aperol (or more to taste!)
Top with soda water and garnish with a slice of orange

Hugo
Ingredients
Ice
30ml elderflower syrup or elderflower liqueur
Prosecco or sparkling wine
Sparkling mineral water
Mint leaves
Lime wedges
Directions
Place ice in a wine glass and pour in 30ml of elderflower syrup
Fill glass to 2/3 with prosecco
Top with sparkling mineral water and add a generous amount of mint leaves
Garnish with lime wedges

Classic Cosmopolitan
Ingredients
Ice cube
60ml of vodka
30ml of cointreau
Teaspoon of lime juice
125ml cranberry juice (1/2 cup)
Directions
Place ice in a martini glass
Shake vodka, Cointreau, lime and cranberry juice in a cocktail shaker to combine.
Remove ice from glass and strain cocktail into the glass

Scottish Old Fashion
Ingredients
Sugar cube
Bitters
Soda water
Ice
Scotch whisky*
Directions
Place sugar cube in a glass, add a few dashes of bitters, and about 30ml of soda water
Crush the sugar with a muddler (or anything really)
Add a few cubes of ice and top with 1-2 shots of scotch whisky
If you’re feeling fancy, serve with a twill of orange skin
* We recommend using a Speyside whisky for this recipe. An Islay will be heavily peaty and less refeshing. However, this is dependant on your personal taste!
