Honeycomb - Need a sugar hit?

Have you had that sugar craving at night with no chocolate in the house, not even the budget cooking type? I have! I am a sweet tooth and while this isn't a healthy recipe it is still one to try out. It's as easy as one, two, three and only makes a small batch, so you won't feel too guilty eating it all at once!

Firstly, Combine 75 grams caster sugar and 3 tablespoons golden syrup in a saucepan.

Secondly, Place the pan onto a medium to high heat and let the mixture melt together. Do not stir. The mixture will turn a maple syrup golden colour and that's when it's ready. Lastly, Remove the pan from the heat, mix in 1 ¼ teaspoons bicarbonate of soda and watch your syrup erupt into an aerated mass of golden goodness. Quickly pour onto a small baking tray lined with baking paper and let it cool. Break or smash apart into shards of delicious honeycomb and enjoy as desired!

If by chance there is actually any left over store in an air tight container. It even lasted a couple of days in the fridge, however moisture will make it go a little tacky.

Caution!: Mixture will be extremely hot. Whenever sugar is heated it is like molten lava and little hands should be kept clear of the kitchen.
